The Minnesota State Fair list of New Foods & Vendors for 2018 is up and I’m getting hungry just looking at it! Purely based on photos and descriptions, I’ve prioritized my list of must-try items (but let’s be real, you know I’m going to try and share them ALL). Let’s go:


Wood Grilled Elote (Tejas Express) – Wood fire-grilled, with chile-spice mayo and sprinkled with queso Cotija and lime juice. The perfect compromise between the traditional corn on-the-cob and the over-the-top cheesy nacho corn on the cob. Also, I’m Mexican, so the appreciation is so real. On that note, shout out to new vendor Taco Cat from Midtown Global Market, for bringing more fiesta to the fair.



BBQ Split (Mama D’s) – Like a banana split, but with pickle spears and scoops of BBQ pulled pork, mac and cheese, and coleslaw. Yes, please.

Earth Wings (French Meadow Bakery & Café) – Fresh cauliflower, season-battered and deep-fried, with sesame BBQ sauce. Also a great option for those who are vegan and gluten-free (I am not). They probably shouldn’t be called “wings”, but I think they look good af. Don’t @ me.

Slider Flights (The Hangar) – I’m notorious for my inability to make decisions when there’s more than one thing on the menu that catches my attention (I usually end up ordering everything), so I love that this allows for a little taste of every option. Three sandwiches, fully loaded, available in brisket, burger and pulled pork.

Smoked Soft Serve Ice Cream (Blue Moon Dine-In Theater) – Had to pick something sweet to round out this list. Nothing captures my heart quite like the classic chocolate-vanilla twist soft-serve in the Dairy Building, but this looks worth trying. Cold-smoked cream in either Cold Brew Coffee or Muscovado Sugar Vanilla, with plenty of options for toppers. I’m down.

Close behind: Irish Tater Kegs (O’Gara’s), General Tso Chicken Taco (Taco Cat), Pepperoni Chips (Lulu’s), Magonada Shave Ice (MinneSnowwii Shave Ice), Sweet Greek Cheese Puffs (Dino’s Gyros).
